It was the end of the week and we were running out of easy cook food in the house so, as I couldn’t be bothered to go to the shop, I decided to make pizza. Had no traditional pizza ingredients, so raided the fridge for left over’s.
I found the following left overs: Stilton, Serrano ham, bottled chilli peppers stuffed with cheese and chorizo.
2 tsp sugar
2 tsp dried yeast
500g strong bread flour
1 tsp salt
1 tbsp olive oil
Pizza base: Put 1 teaspoon of sugar in a jug and dissolved it in 150mls warm water. Stirred in 2 teaspoons of dried yeast and left to the side to start fermenting.
Weighed out 500g strong bread four and put it in a large mixing bowl. Added a teaspoon of salt and a teaspoon of sugar to the four and mixed together. Added a tablespoon of olive oil and mixed this in as best I could. By the time I had done this the yeast had an inch of froth on the top so I gave it a swirl around in the jug then tipped it into the four and mixed this in. I got some more warm water in the jug and just added a little of this at a time until the flour turned to a gooey dough.
Got another bowl out and greased this with a little olive oil. Sprinkled lots of flour on the counter top and tipped out the dough. Kept kneading the dough and sprinkling a little more four if needed, until it started to become a little elastic. Placed this into the oiled bowl, placed a clean damp tea towel over the bowl and put in a warm place for an hour or so until the dough doubled in size.
Split the dough into 4. Each one I rolled out with a rolling pin on a floured worktop and put on baking trays ready to decorate.
Pizza decoration 1: sprinkled some stilton over base then torn up pieces of Serrano ham. Seasoned and sprinkled a little olive oil.
Pizza decoration 2: smeared a little tomato puree and ketchup on the base then chopped up some of the chilies with cheese and sprinkled these over the base. Added some torn up pieces of chorizo along with a little seasoning and sprinkling of olive oil.
Cook in oven preheated to its hottest setting for about 10 minutes…...DELISH!
