Meatballs


  
This was second on my batch cooking list.  I thought, in a similar way that I freeze uncooked burgers I would do the same but with meatballs.

I put all of the following ingredients in a large bowl.

8 Lincolnshire sausages squeezed out of their skins
500g minced beef
1 finely chopped onion
a handful of chopped flat leaf parsley
85g parmesan cheese
100g breadcrumbs
2 eggs beaten with a fork

Next I got my hands in to the mixture and squidged it all together.  I then made 24 meatballs, laid them out on cupcake tins and put them in the freezer.  Once frozen I put them into sandwich bags to store in the freezer until needed later on in the week.
