Tomato Sauce

        


It’s Bank Holiday Monday and I have just got back from a double set of weekends away.  I feel summer has now really kicked off and I need to change my routine at home so I can get everything done that I need to in the week so my weekends are then free to enjoy.  So the first thing I want to change is the cooking/eating.  We still have no money so have to buy cheap and clever to get the best value for our food.  Therefore we are back to no luxuries this month.  Still I still believe in good fresh food so I decided to try and batch cook all my meals for the week as much as I can.

The first thing on my list was tomato sauce that can be made, frozen then added to pasta sauces or topping for homemade pizza.

Firstly I finely chopped 2 small onions, 1 carrot and crushed 2 cloves of garlic.  I fried these off in a little olive oil in a large sauce pan.

When cooked added 2 table spoons of tomato puree, 200mls white wine, 3 cans of chopped tomatoes and a handful of basil leaves.

Gave it all a stir then left it on a low simmer for about 20 minutes until it looks a nice thick saucy consistency.

Leave to cool then liquidise it all, chill, freeze or eat.
